Catalase catalyzes the conversion of hydrogen peroxide to water and oxygen. Research studies show that overexpression of this antioxidant enzyme increases the ability of pancreatic β-cells to scavenge reactive oxygen species (ROS), thereby protecting pancreatic β-cells from oxidative stress.
